Breakfast tacos are one of my favorite ways to spice up breakfast and are a fun twist on your typical eggs and toast. Loaded with seasonal ingredients, locally sourced eggs, and bursting with colorful spice combinations, breakfast tacos are a great way to get excited about breakfast while also getting a few servings of veggies, healthy fats, and healing herbs into your diet to help jumpstart your day.

How To Choose The Best Eggs

There are so many different types of egg labels to choose from at the grocery store that it can sometimes feel overwhelming to know which option is the best choice. While the best option is always going to be purchasing your eggs from a local farm, not everyone may have that option, which is where knowing what labels to lookout for can really come in handy.

Conventional Eggs: These are the eggs you see at the grocery store that are the cheapest and have no labels associated with them.

Cage Free: Cage free eggs are just what the name suggests, cage free. This means that the hens are free to move about the hen house. However, this doesn’t mean that the hens have access to the outdoors or pasture and often can still be kept in overcrowded, unhealthy environments. Cage free chickens also can be fed any type of conventional feed.

Free Range: Free range refers to eggs from chickens that are cage free and have been allowed access to the outdoors. However, this access can really vary depending on the farmer and is somewhat of a vague term and can be misleading.

Omega-3 Enriched: These eggs come from hens which have been fed a diet that is high in or has been “enriched” with high omega-3 fatty acid containing foods like flaxseed or kelp.

Organic: Organic eggs refer to eggs that came from chickens which were fed a certified organic feed and are usually cage free or free-range.

Pasture Raised: Pasture raised eggs are the eggs ideally everyone would be consumed and choosing. While pasture raised eggs doesn’t have any legal certification process, it refers to eggs the came from chicken that were allowed to roam pasture, forage for foods like seeds and insects, and return to their hen house at night to rest and lay eggs. When you buy eggs from a local small farmer they usually will be considered pasture raised. These eggs you will notice are usually much brighter in color due to the nutrient rich natural diet the chicken are allowed.

How To Make Breakfast Tacos?

There are so many different ways that you can choose to make breakfast tacos, but I personally love opting for an herb scramble over fresh corn tortillas.

Depending on the season of year, it’s fun to experiment with different types of seasonal vegetables, herbs, and spices to make for a wide variety of flavor combinations to help spice up your usual boring breakfast.


Choose Your Base:

Personally, I think that there is really only one base option when it comes to making tacos and that would be fresh corn tortillas, but some other options also would be:

  • Wheat Flour Taco Shells

  • Fresh Corn Taco Shells

  • Lettuce Cups


Choose Your Veggies/Fruit:

Next, it’s time to choose your veggies. I would highly recommend opting for something seasonal and if you’re craving some breakfast tacos in the dead of winter, think about using a canned salsa from summer instead of raw tomatoes that came from thousands of miles away.

  • Tomatoes/Salsa

  • Mango

  • Papaya

  • Cabbage

  • Sautéed Kale

  • Spinach

  • Corn

  • Red Onion/Onion

  • Jalapeno


Choose Your Fat:

No meal is complete without a little fat to help balance out the carbohydrates and keep you feeling full longer. A few of my favorite fats that I love to add to breakfast tacos are:

  • Goat Cheese

  • Cheddar Cheese

  • Parmesan Cheese

  • Avocado

  • Chipotle Aioli


Choose Your Herbs:

Lastly, no breakfast taco would be complete without the right seasoning. This is where it is fun to stretch outside your comfort zone and explore some new flavors that you may not have thought to try before:

  • Cilantro

  • Chives

  • Basil

  • Dill

  • Smoked Paprika

  • Chipotle

Goat Cheese And Chive Homemade Breakfast Tacos Recipe

Ingredients

  • 4 pasture raised eggs

  • 4 fresh corn tortillas

  • 1 tablespoon coconut oil

  • 1/4 cup fresh chives (chopped) + 2 tablespoons for garnish

  • 1/4 cup goat cheese

  • 1/2 cup cherry tomatoes (sliced)

  • Salt and pepper





Directions

  • Break eggs into a bowl and whisk together until well combined.

  • Add chopped chives and pinch of salt and pepper to eggs and whisk well once more.

  • In a medium size pan over medium heat melt coconut oil and once hot pour the egg batter into the pan.

  • Using a spatula continuously stir the egg batter until scrambled eggs begin to form.

  • Continue cooking until eggs are cooked through (~5 minutes).

  • While eggs are cooking heat corn tortillas in the stove.

  • Place scrambled eggs over corn tortillas and then top with sliced cherry tomatoes, a sprinkle of goat cheese, salt and pepper and a garnish of fresh chives.

  • Serve immediately and enjoy!
