It has been hot here in Boston lately, and trust me I am not complaining! There honestly was nothing I was craving more after my hot and humid morning run this morning then this simple green smoothie above. Today was one of those days where I pretty much just crossed my fingers and hoped for the best when it came to what would ultimately come out of my blender, luckily it all turned out for the best.
Specifically this morning I was feeling a little bit run down, and just wasn't as energized as I had been earlier in the week. It may have had something to do with the less than adequate sleep I got last night (I NEED 8hrs!), or the fact that a short week just always tends to throw me for a loop, but either way I knew that I wanted a little bit of a kick in this smoothie to get me going and out the door by 7am.
What is great about eating smoothies, rather than drinking them, is that most importantly you can add a bunch of fun toppings that you couldn't if you were drinking your smoothie through a straw, and also we as humans tend to eat things slower than we drink, so eating a smoothie bowl is a great way to slow yourself down a bit in the morning and actually pay attention to what you are eating and how it is making you feel. Now I get that every morning cannot be spent making a beautiful smoothie bowl, so when you are running late try pouring your smoothie into a tupperware, toss a couple topping on top, and then run out the door. You can still eat it while sitting on the bus or train, or you could even keep it pretty cold and frozen for eating at work if you packed it in with a few ice packs.
Just trust me when I say that eating your smoothie will totally change how you view this nutritious meal, and it will be hard to go back to using that straw once you pick up the spoon!
ALL ABOUT THE GREEN'S SMOOTHIE BOWL
- 2 handfuls fresh baby spinach
- 1 handful baby kale
- 1 TB matcha powder
- 1 cup brewed and cooled green tea
- 1/4 frozen mango
- 1 frozen banana
- 1 scoop vanilla vegan protein powder (I like sunwarrior and or hemp seed protein)
- 1/2 tsp cinnamon
- 1/2 tsp tumeric
- 2-3 drops of stevia (optional: I don't include it, but if you want some added sweetness give liquid stevia a try)
- 3-4 ice cubes
- 3 strawberries
- 2 TB raw cacao nibs
- 2 TB coconut flakes (unsweetened)
- 1-2 TB chia seeds
- Combine all smoothie ingredients in a high-speed blender and blend until smooth.
- Pour smoothie into a bowl, tupperware, mason jar, etc.
- Top with topping ingredients.
- Enjoy with a spoon!
